Chilli Chicken and Avocado Taco Recipe

Heard of Taco Tuesdays? It can be Taco night, every night with our quick and simple Chilli Chicken and Avocado Tacos.

Loaded with 38g of protein and 34g of carbs per serving, our tacos make for a nutritious, well balanced (and not to mention tasty!) lunch on-the-go and are a real family favourite at dinner time.

They pack a spicy punch, with a subtle heat from the chilli in every bite. But don’t worry if you’re not a spice fan – we’ve paired our Chilli Chicken Tacos with a creamy lime avocado salsa to balance out the spice. So, even the most delicate pallets can still enjoy them.

The best bit? Our taco recipe takes less than half an hour to whip up, making it perfect busy evenings! Simply fry up your chicken and garlic, before seasoning with chilli powder, paprika, cumin, oregano, and pepper. Then pop the chicken into wholemeal tortillas and top with the creamy avocado and tomato salsa.

Ingredients:

  • Low-calorie oil spray
  • 2 cloves of garlic, crushed
  • 200g chicken breast, diced into small pieces
  • 1 tsp chilli powder
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • ¼ tsp freshly ground black pepper

Avocado Salsa:

  • ¼ avocado, mashed
  • 3 cherry tomatoes, diced
  • ¼ red onion, diced
  • 1 tbsp fresh coriander, chopped
  • ¼ lime, juiced
  • Pinch of red chilli flake

To serve:

  • 4 mini wholemeal tortillas
  • 4 lime wedges
  • Fresh coriander, finely chopped

Method:

  1. Heat a frying pan with low calorie oil spray.
  2. Sauté garlic for 2 minutes.
  3. Add diced chicken breast and brown all over.
  4. Season chicken with chilli powder, paprika, cumin, oregano and pepper and cook for 5-6 minutes until cooked through.
  5. Place all the salsa ingredients into a bowl and mash together.
  6. Warm tortillas and top with avocado salsa and chicken.
  7. Serve with extra coriander and lime wedges.
