Ginger Chicken and Cashews Recipe

Loaded with heaps of veggies like red pepper, broccoli, onion, and baby corn and served with brown rice this is a healthier but still delicious take on the popular takeaway dish.

The trick to getting a rich ginger flavour? Make sure to fry the chicken in the same pan as the onion, garlic, and ginger to load up the taste before adding the vegetables, cashews, and the sesame sauce. It sounds simple, but it makes all the difference to soak up the flavours!

Ingredients
Sauce:
- 1 tbsp reduced salt soy sauce
- ½ tbsp tahini
- 1 tsp sesame oil
- ¼ tsp chilli flakes
- 1 tsp cornflour
Stir fry:
- Low calorie oil spray
- 200g chicken breast, diced
- ½ onion, sliced
- 2 garlic cloves, sliced
- 15g ginger, peeled and grated
- ½ red pepper, deseeded and sliced
- 20g tender stem broccoli tips
- 20g baby corn, halved
- 20g cashews
To serve:
- 150g brown rice, cooked
- 2 spring onions, sliced
- 1 tsp sesame seeds
- Fresh coriander, chopped
Method:
- In a small bowl whisk together the ingredients for the sauce and set to one side.
- In a wok or large frying pan spray low-calorie oil spray and bring to a medium heat.
- Add chicken breast and cook for 5-6 minutes.
- Add onion and garlic and stir fry for 2-3 minutes.
- Then add ginger and cook for a further minute.
- Add red pepper, broccoli, baby corn and cashews and stir fry for 3-4 minutes until nearly cooked.
- Pour over the sauce you prepped earlier and heat through.
- Serve over freshly cooked brown rice and top with spring onions, sesame seeds and coriander.
